Buttermilk Cinnamon Loaf

My friend, L, gave me this recipe at work. Apparently her kids are picky eaters so she challenged me to make this recipe from Power Skinny even better (the original is delicious too). It turns out that I succeeded because I've made 6 loaves in the last 5 weeks. This one is super fast, has a limited number of good ingredients and is easy to double. Ingredients

1/2 cup butter

1 cup sugar

1 egg

1 cup buttermilk

2 cups flour

1.25 teaspoons baking soda


Cinnamon/sugar mixture

1/2 cup sugar

1 teaspoon cinnamon


Directions

Begin by creaming together butter, sugar and egg in a stand mixer with a whisk attachment. Add milk, flour, and baking soda. Mix just to incorporate. Put 1/2 of batter into greased loaf pan.





Sprinkle half of cinnamon/sugar mixture on top of the batter in each pan. Add remaining half of the batter into pan; sprinkle with last half of cinnamon topping.




Get a butter knife to the bottom of the pan (vertically) and swirl to mix the batter with the sugar. Back and forth, do not overlap. Bake at 350 degrees for 50 min or until toothpick tester come clean. It's okay to be slightly soft in the middle, it will cook with residual heat while in the pan. Cool in pan for 30 minutes before removing. Slice and serve.
