Sweet, Spicy Onion Jam Chicken


Full disclosure: even though I eat chicken quite a bit, I’m not a huge fan of it on its own. It always seems so bland and boring; no matter how we try to fix it up. THIS chicken recipe, however, is not bland, is very seasoned and so juicy. My husband was working, my kids were watching the Lion King and I just threw a bunch of stuff together on the stove. It turned out surprisingly well and we enjoyed the leftovers the next day. It’s really quick to throw together and alter (don’t add chili peppers if you’re not a fan of heat). Huge bonus, it’s so easy to make with things you’ll surely have in your pantry.

Ingredients:

8 chicken drumsticks 3 tbs butter 5 cloves peeled and smashed garlic 1 medium onion, sliced ½ cup maple syrup 1/3 cup soy sauce ¼ tsp chili flakes salt and pepper to taste

Directions:

Preheat oven to 350 degrees F. Season chicken with salt and pepper and let sit out to dry a little bit.

In a non-stick pan, warm butter on medium-high heat. Add garlic and onions. Cook down for 5 minutes until translucent, constantly stirring to keep the garlic from burning. Turn down the heat to low and add the maple syrup and soy sauce. Keep it moving while it breaks down the onions and all melds together to create a thick, slightly sweet jam.

On a baking tray, lined with tinfoil, lay out the drumsticks. Pour the onion jam mixture over the chicken and roll around in the sauce to coat. Sprinkle with chili flakes. Cook in oven for 30 minutes or until juices run clear, turning once halfway through cooking.

When you remove the chicken from the oven, place in heatproof bowl, pour in all of the juices from the pan and give it a good stir. Let rest 5-10 minutes then serve over vegetables or with rice. MmMMmmmMm.
