Brazillian Pineapple

My husband has some sort of strange addiction to Brazillian pineapple. Every time I mention going to Copacabana he starts smiling because I know what he’s thinking, he’s going to get pineapple. Once in a while he subtly tells me how much he loves it, “Babe, you know what I could go for? Pineapple. Doesn’t Copacabana make the best pineapple?” Yeah yeah, I get it. But I’m not spending a few hundred dollars on dinner just for him to get his dessert fix. So, here’s my recipe for Brazillian Pineapple.

Ingredients 1 ripe pineapple 2 tbs ground cinnamon ¾ cup granulated sugar ¼ cup oil (for the grill)
Directions
Begin by cutting off the skin of the pineapple. Coring the middle of the pineapple is optional. Cut thick slices, between ¼ and ½ inch thick.

In a separate, dry bowl, combine the cinnamon and sugar. Lightly grease a grill pan (or your BBQ – it’s the best) with cooking oil and let it heat up on medium-high heat. Sprinkle the cinnamon sugar generously on both sides of the pineapple slices and place on the grill. Cook for 5-8 minutes per side, until seared. Serve warm.
Alternatively, instead of grilling the pineapple you can bake it in a 400 degree oven for 8 minutes per side. As a final step, broil the pineapple for 2-3 minutes per side. Serve warm.

Bonus: This tastes amazing on its own but try it over vanilla ice cream, it’s life changing!
