Baked Halibut


Fish has always been a huge crowd-pleaser in our house. Even when the kids didn’t have teeth but wanted solid food, they’d gravitate towards fish. We’ve always been firm believers in making our kids try everything, at least once or twice, and if they truly didn’t like it they didn’t have to eat it again. Luckily, my kids eat almost everything, including this meal. Halibut is easy to prepare in advance and by baking it in foil or parchment paper, it’s easy to take out of the fridge and pop in the oven for a fast but full, healthy meal.

Ingredients:

6 pieces halibut

2 cups couscous

2 large carrots

1 large pepper (any colour)

1-2 small zucchini

1 lemon

1 bunch parsley

1 small onion

1 package Goya seasoning + 1 tsp lemon seasoning garlic + 1/2 tsp curry powder + pinch red pepper flakes

salt & pepper to taste

Directions:

Dry halibut and sprinkle with seasonings, on both sides.

Soak couscous in lukewarm water for 8 minutes. In the meantime, chop vegetables into bite sized pieces. Slice the onion thinly and add to vegetables. Zest the lemon and fold into drained couscous. Add salt and pepper to everything. Cut foil or parchment into large rectangles, enough to make a pouch big enough for one piece of fish, a sixth of the vegetables and couscous.

On half of each piece of foil/parchment, place 1/6th of the couscous, top with vegetables and one piece of fish. The measurements are not exact and can vary, I put less couscous with smaller pieces of fish for the kids. Sprinkle with salt and pepper, parsley and a squeeze of lemon.

Fold your foil/parchment paper in half and roll the edges tightly. Lay out on baking trays and bake in oven for 20 minutes. When cool to the touch, open your pouches and serve. I promise, you'll love the flavour and texture of this meal! My little one made a giant mess but finished all of it!
