Napkin Muffins

I created this one for my co-workers who challenged me with just a name and then I had to come up with something delicious (also, I needed to get rid of the bushel of apples sitting in my kitchen). Challenge accepted and CRUSHED. N - Nutella, AP - apple, KIN - pumpkin. Needless to say, this has become a favourite for the last 4 years. The recipe makes 24 muffins but good luck keeping them around that long, especially if you're taking them for Thanksgiving.

Ingredients

2 ½ cups flour

1 ½ cups white sugar

1 tsp baking soda

2 tsp pumpkin pie spice

½ tsp salt

2 eggs

1 cup minus 1 tablespoon pumpkin puree

½ cup vegetable oil

2-3 cups peeled and chopped apples

2 tbs Nutella

Directions

Preheat oven to 325 degrees. In a large bowl, sift and combine all of the dry ingredients. In a separate bowl, mix all of the wet ingredients, ending with the Nutella and then carefully fold in the apples. Slowly fold in the dry ingredients into the wet ingredients. Your batter will be thick.

Butter (or use non-stick spray) 24 muffin cups. Fill with 1 ½ tablespoons of batter, about ¾ of the way full. Bake for 25-30 minutes, until the house smells like a pumpkin spice latte. Remove from the oven.

These are great because they can be served warm or cold and the flavour is amazing, like a warm autumn day. I also love them for breakfast.Enjoy and HAPPY THANKSGIVING!
